Ingredients

- 3 large sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup Greek yogurt
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
Instructions
- Preheat your oven to 425°F (220°C). Wash, peel, and cut sweet potatoes into sticks about 1/4 inch thick.
- In a large bowl, toss the sweet potato sticks with olive oil, garlic powder, paprika, salt, and pepper.
- Arrange the sweet potato sticks on a parchment-lined baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through.
- Mix Greek yogurt, honey, and Dijon mustard in a small bowl to prepare the dipping sauce.
- Once the fries are done, serve them with the prepared dipping sauce.
