  1. Preheat your oven to 400°F (200°C).
  2. In a medium pot, boil water. Add your pasta and cook according to package instructions until al dente, then drain and toss with a little olive oil.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  4. Add the diced bell pepper and zucchini to the skillet and sauté for 3-4 minutes until they begin to soften.
  5. Add the shrimp and cook until they turn pink, about 3-4 minutes, seasoning with garlic powder, salt, and pepper.
  6. Stir in the fresh spinach until wilted, about 2 minutes.
  7. Combine the cooked pasta with the shrimp and vegetable mixture, adding Italian seasoning and tossing well.
