A rich, hearty Italian Bolognese sauce made with a blend of meats, tomatoes, and aromatic herbs, cooked slowly to perfection in a slow cooker.

1 lb ground beef (preferably 80/20 for flavor)
1/2 lb ground pork
1 large onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 can (28 oz) crushed tomatoes
2 tablespoons tomato paste
1 cup beef broth
1/2 cup red wine (optional, but recommended for depth of flavor)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1/2 cup whole milk or heavy cream
2 tablespoons olive oil
Fresh basil for garnish
Instructions
Heat the olive oil in a large skillet over medium heat. Add the ground beef and pork, cooking until browned. Break up the meat with a spoon as it cooks.
Add the onions, garlic, carrots, and celery to the pan. Sauté until the vegetables are softened, about 5 minutes.
Transfer the contents of the skillet to the slow cooker. Add the crushed tomatoes, tomato paste, beef broth, red wine, oregano, and basil. Stir well to combine.
Set your slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours. Stir occasionally if possible.
About 30 minutes before serving, stir in the milk or cream to enrich the sauce and give it a velvety texture.
Season with salt and pepper to taste. Serve the sauce over your favorite pasta, garnished with fresh basil.
