Ingredients

- 1 pound fresh radishes, washed and trimmed
- 3 tablespoons olive oil, preferably extra virgin
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh rosemary or thyme, chopped (optional)
- Fresh parsley for garnishing
Instructions
- Preheat the oven to 425°F (220°C).
- Cut the radishes into halves or quarters for even cooking.
- In a large bowl, combine olive oil, minced garlic, salt, and pepper. Toss in the radishes until evenly coated.
- Arrange the radishes in a single layer on a baking sheet and roast for 20-25 minutes, stirring halfway.
- Sprinkle the fresh herbs over the radishes during the last 5 minutes of roasting.
- Garnish with fresh parsley before serving hot.
