2 pounds ground beef, preferably a mixture of 80% lean and 20% fat
1 cup breadcrumbs, plain or seasoned
1/2 cup chopped onion, preferably yellow
1/2 cup chopped bell pepper, red or green
2 large eggs
1/4 cup milk, preferably whole
3 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper, freshly ground
1 teaspoon garlic powder
1 tablespoon mustard, yellow or Dijon
1/2 cup ketchup
1/4 cup brown sugar, packed
1 tablespoon apple cider vinegar
Instructions
Preheat your oven: Set your oven to 350°F (175°C).
Prepare the meatloaf mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, chopped bell pepper, eggs, milk, Worcestershire sauce, salt, black pepper, garlic powder, and mustard. Mix until just combined.
Shape the meatloaf: Transfer the mixture to a lightly greased loaf pan or shape it into a loaf on a lined baking sheet.
Make the glaze: In a separate bowl, whisk together ketchup, brown sugar, and apple cider vinegar until well blended.
