These oven-baked vegetable bites are not only easy to prepare but also packed with the nutritious goodness of zucchini, a staple in Mediterranean cuisine, and the savory flavors that make this dish so enticing.
Ingredients
Scale:
2 medium zucchini, grated (about 2 cups)
1 medium carrot, grated
1/2 cup breadcrumbs (can use gluten-free if desired)
1/4 cup grated Parmesan cheese (or nutritional yeast for vegan option)
1 large egg
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Olive oil spray (or a small amount of olive oil for brushing)
Instructions
Preheat the oven to 400°F (200°C).
Grate the zucchini and carrot, then squeeze out excess moisture using a clean kitchen towel.
In a large mixing bowl, combine the grated zucchini and carrot with breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, thyme, salt, and pepper. Mix until well incorporated.
Form the mixture into small balls or patties, about 1-2 inches in diameter.
Line a baking sheet with parchment paper and arrange the tots, ensuring they are spaced apart.
Lightly spray or brush the tops of the tots with olive oil.
Bake for about 20-25 minutes, flipping halfway through, until golden brown and crispy.
Remove from the oven and let cool slightly before serving with tzatziki sauce or your favorite dip.
