- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cardamom
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup brewed strong coffee (cooled)
- 1 cup whole milk
- 1 tablespoon vanilla extract
- 1 cup whipped cream
- Chai spice mix for dusting (a blend of cinnamon, ginger, cardamom)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, spices, and salt.
- In another bowl, cream together the granulated and brown sugar with the softened butter until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Incorporate the vanilla extract.
- Gradually mix in the dry ingredients into the wet mixture, alternating with the brewed coffee and milk.
- Evenly distribute the batter between the prepared cake pans and smooth the tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Remove from the oven and allow the cakes to cool in the pans for about 10 minutes before transferring to wire racks to cool completely.
- Once cooled, layer the cakes with whipped cream between them and on top. Dust with a light sprinkle of chai spice mix.
