1 pound Brussels Sprouts, trimmed and halved
2 tablespoons Olive Oil, for roasting

1 teaspoon Dijon Mustard
¼ cup Parmesan Cheese, grated (optional)
½ teaspoon Salt, to taste

Instructions
Preheat your oven to 425°F (220°C).
Rinse the Brussels sprouts under cold water. Trim the ends and cut them in half.
In a large bowl, combine the halved Brussels sprouts with olive oil, salt, and pepper. Toss until they are well coated.
