Start your day with a refreshing twist on breakfast with these creamy overnight oats, inspired by the beloved Indian dessert, kulfi. This dish combines the rich flavors of traditional kulfi, such as cardamom, saffron, and nuts, into a nutritious and easy-to-prepare oatmeal.

1 cup rolled oats
1 tsp ground cardamom
2 tbsp chia seeds (optional)
1 tbsp sweetener (maple syrup, honey, or sugar)
1 ½ cups coconut milk (or any dairy-free alternative)
1 tsp vanilla extract
Pinch of saffron strands (optional)
2 tbsp chopped nuts (pistachios, almonds, or cashews)
Fresh fruits (e.g., mango, strawberries, or banana)
Shredded coconut
Instructions
In a mixing bowl, combine the rolled oats, ground cardamom, chia seeds, and sweetener. Stir until well mixed.
In another bowl, whisk together the coconut milk, vanilla extract, and saffron strands until smooth.
Pour the coconut milk mixture into the bowl with the dry ingredients. Stir thoroughly.
Cover the bowl with plastic wrap or transfer the mixture into individual jars or containers with lids.
Refrigerate overnight, or for at least 6 hours.
When ready to serve, give the oats a good stir. If too thick, add a splash of additional coconut milk.
Top with chopped nuts, fresh fruits, and shredded coconut before enjoying.
