Celebrate with vibrant flavors and a festive atmosphere through a Mexican fiesta, featuring a taco bar, appetizers, drinks, and dessert.
Ingredients
Scale:
1 lb ground beef (or turkey or vegetarian alternative)
1 packet taco seasoning
12 small corn tortillas
2 cups shredded lettuce
1 cup diced tomatoes
1 cup shredded cheese (cheddar or Mexican blend)
1 cup sour cream
1 jar salsa
1 can black beans, drained and rinsed
1 cup guacamole
1 bag tortilla chips
2 cups assorted fresh vegetables (carrots, bell peppers, cucumbers)
1 cup queso dip (store-bought or homemade)
1 pitcher of agua fresca (watermelon or pineapple)
1 bottle of Mexican soda (like Jarritos)
1 bottle of tequila or mezcal (for cocktails)
1 box of churros (store-bought or homemade)
1 cup chocolate sauce (for dipping)
Instructions
In a skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it up with a spatula until no longer pink. Drain excess fat, then stir in the taco seasoning and follow the packet instructions (usually adding water and simmering for about 5 minutes until thickened).
Heat the corn tortillas on a dry skillet over medium heat for 30 seconds on each side until warm and slightly charred.
Set up a buffet-style taco bar with the cooked meat, tortillas, shredded lettuce, diced tomatoes, cheese, sour cream, salsa, and black beans.
Serve guacamole in a bowl, surrounded by tortilla chips and fresh vegetables. If making queso dip, warm it until melted and serve with chips.
Prepare agua fresca by blending fresh fruit with water and a little sugar to taste. Strain and serve chilled.
Use colorful tableware and decorations for a festive atmosphere.
Warm churros in the oven if necessary and serve with chocolate sauce for dipping.
