2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cornstarch
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
2 tablespoons fresh lime juice
1 tablespoon lime zest
¼ cup fresh mint leaves, finely chopped
1 tablespoon coarse sea salt (optional)
Extra lime zest for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking soda, salt, and cornstarch. Set aside.
In another bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract, lime juice, and lime zest until fully combined.
Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
Fold in the finely chopped mint leaves gently using a spatula.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
If desired, sprinkle a pinch of coarse sea salt on top of each cookie before baking.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers still look soft. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
