A refreshing tropical punch combining the sweetness of fresh strawberries with the creamy richness of coconut milk.
Ingredients

2 cups fresh strawberries, hulled and sliced
1 cup pineapple chunks (fresh or canned)
1 lime, juiced
4 cups coconut milk
4 cups sparkling water or lemon-lime soda
1/2 cup coconut syrup (or to taste)
Optional: 1/4 cup honey or agave syrup
Fresh mint leaves for garnish
Additional strawberry and pineapple slices for garnish
Instructions
Wash the fresh strawberries thoroughly under cold water. Hull and slice them into quarters.
In a large mixing bowl or pitcher, combine the sliced strawberries, pineapple chunks, and lime juice. Let the mixture sit for about 10 minutes to meld flavors.
Pour the coconut milk into the fruit mixture and stir gently to combine.
Gradually add the coconut syrup to the mixture, tasting as you go to achieve your desired level of sweetness.
Just before serving, slowly pour in the sparkling water or lemon-lime soda and stir gently.
Fill tall glasses with ice cubes and pour the strawberry piña colada punch over the ice. Garnish with fresh mint leaves and additional fruit slices.
